This area owns the high-quality natural groundwater, the rich soil and the four distinct seasons, which is suitable for the growth of grain. Only the vinegar brewed in the area can use the logo of Geographical Indication.

Major raw materials used are Chinese sorghum, barley and pea from loess plateau. Grains produced in this area have strong resistance of plant, are nutritious and great for brewing vinegar.

 

 

 

Traditional Brewing Technology -----China Intangible Cultural Heritage

 

Our traditional technology for brewing vinegar was originated form Meiheju Vinegar Workshop which was established in 1368 AD. The production process is completely manmade and has four steps: steaming—fermentation—fumigation—pouring--aging. It can maximally retain nutritional elements from ingredients.
